Char-grilled Kangaroo Kebabs & Smoked Eggplan Recipe

Ingredients
  • 1 2/3 tb Lemon juice
  • 2 ts Parsley leaves, sliced.
  • 2 Medium-sized eggplants
  • 1 tb Tahini
  • 1 3/4 oz Yoghurt, plain
  • 1/2 ts Sea salt
  • 2 ts Coriander seeds, roasted and ground
  • 1 ts Garlic cloves, minced
  • 1 ts Black pepper, freshly ground
  • 1 1/3 lb Kangaroo fillet, trimmed and cubed

Directions
  • Step #1 Roll the cubes of kangaroo meat in the ground coriander seed & black pepper, coating lightly.
  • Step #2 Skewer meat & put on an oiled tray until ready to cook.
  • Step #3 Grill the eggplants until skins are black and blistered.
  • Step #4 Cool slightly & skin them while still warm.
  • Step #5 Squeeze out the bitter juices.
  • Step #6 Mash the flesh with a large fork slowly adding the garlic, tahini, lemon juice, sea salt, parsley & yoghurt.
  • Step #7 Grill the kebabs under (or over) high heat, brushing with oil to keep moist being careful not to toughen the meat.
  • Step #8 Spoon the eggplant puree onto the plates.
  • Step #9 Remove skewers & pile the meat cubes onto the puree.
  • Step #10 Serve as soon as possible.
