Coconut Banana Chocolate Cream Pie Recipe

Ingredients
  • 1 (1.4 oz) package sugar-free instant chocolate pudding mix
  • 1/2 tsp coconut extract, divided
  • 1 1/3 c cold water
  • 1 chocolate crumb crust (9 inches)
  • 2/3 c nonfat dry milk powder
  • 2 medium ripe bananas, cut into 1/4-inch slices
  • 1 tbsp flaked coconut, toasted
  • 1 c reduced-fat whipped topping, divided

Directions
  • Step #1 In a bowl, stir water & milk powder until powder is dissolved.
  • Step #2 Add pudding mix; whisk for 1-2 mins or until thickened.
  • Step #3 Fold in 1/4 c whipped topping & 1/4 tsp extract.
  • Step #4 Layer banana slices in the crust; top this with pudding mixture.
  • Step #5 Cover & put in the fridge.
  • Step #6 Combine remaining whipped topping & extract; spread over pudding.
  • Step #7 Sprinkle top with coconut.
  • Step #8 Cover & put in the fridge for at least 1 hr before serving.
