Oriental Brown Rice Salad With Cashews Recipe

Ingredients
  • 1/4 c Rice vinegar
  • 2 tb sliced fresh parsley
  • 1/4 c Peanut oil
  • 1/2 ts Pepper
  • 3 Green onions; sliced
  • 4 c Cold cooked brown rice
  • 1/2 c Frozen corn kernals
  • 1/2 Red bell pepper; sliced
  • 1 Celery stalk; sliced
  • 1 ts Salt
  • 1 md Carrot; peeled & sliced
  • 1/2 c sliced snow peas
  • 1 ts Roasted sesame oil
  • 1 ts Sugar

Directions
  • Step #1 Place the rice in a large mixing bowl.
  • Step #2 In a small mixing bowl, mix the peanut oil, salt, pepper, sugar, & sesame oil.
  • Step #3 Stir until the sugar dissolves, then pour over the rice, toss, & set aside.
  • Step #4 Steam the carrot, snow peas, & corn in or over a small amount of boiling water for 1 min.
  • Step #5 Rinse the vegetables in cold water.
  • Step #6 Drain & stir the vegetables into the rice.
  • Step #7 Add the remaining ingredients & toss to mix well.
  • Step #8 put in the fridge for 1 to 2 hrs and serve cold.
