Oriental Cabbage Salad Recipe

Ingredients
  • 4 oz Snow peas
  • 4 1/2 tb Salad oil -- light
  • 1/4 ts Minced garlic
  • Salt & pepper
  • 1 1/2 tb Rice wine vinegar
  • Fresh cilantro leaves -- f Garnish
  • 1 ts Minced ginger
  • 1 1/2 tb Soy sauce, low sodium
  • 1 c Brown rice -- dry measure
  • 1 Scallion
  • 1/4 c Cashews, dry-roasted

Directions
  • Step #1 Cook rice until tender (up to 60 mins).
  • Step #2 Cook snow pears in boiling water until tender, 2 to 3 mins, & drain well.
  • Step #3 Cut into 1/2-inch diagonal pieces.
  • Step #4 Slice scallion in 1/4-inch rings.
  • Step #5 Separate cashews into halves.
  • Step #6 In a small jar, ginger, mix garlic, vinegar, soy, & oil & shake to mix.
  • Step #7 Toss together rice & vegetables, and half the nuts; dress & toss to coat.
  • Step #8 Taste & Spice up this with salt and pepper if necessary.
  • Step #9 Serve at about room temp & garnish with remaining cashews & fresh cilantro leaves.
