Oriental Chrysanthemum Bowl Recipe

Ingredients
  • 4 tb Soy sauce, low sodium
  • 1 Red pepper -- julienned
  • 1 tb Cornstarch
  • 2 c Cooked rice
  • 3 Chicken breast halves
  • 1 Can
  • 1 Onion -- minced
  • 2 Garlic cloves -- minced
  • 3 tb Packed brown sugar
  • 1 Green bell pepper --
  • Julienned
  • 8 oz Pineapple chunks in juice --
  • 1/2 ts Ginger
  • 2 tb Vinegar

Directions
  • Step #1 Use 3 chicken breast halves to yield about 4 servings.
  • Step #2 Use more chicken for larger portions.
  • Step #3 1.
  • Step #4 To prepare chicken: skin, debone & chop into cubes.

  • Step #6 Mince the garlic cloves.
  • Step #7 3.
  • Step #8 Wash, seed & julienne the red & green peppers.

  • Step #10 Do not drain the pineapple.
  • Step #11 5.
  • Step #12 Heat a heavy skillet; add 1 tbsp oil.
  • Step #13 Saute the peppers, garlic & onion until onion is limp.
  • Step #14 remove this from skillet & keep warm.

  • Step #16 Add 1 tbsp oil to skillet & cook chicken cubes until all turn white & are cooked through.
  • Step #17 This step doesn't take long -- don't overcook.

  • Step #19 Mix cornstarch with soy sauce & some of the pineapple juice in a small bowl.
  • Step #20 8.
  • Step #21 mix the chicken with the onion mixture.
  • Step #22 Add the pineapple chunks & juice along with the brown sugar, vinegar and ground or freshly grated ginger.
  • Step #23 Heat to boiling, then add the cornstarch mixture.
  • Step #24 Stir constantly until sauce is thickened and heated through.
  • Step #25 9.
  • Step #26 Serve as soon as possible over hot cooked white rice.
