Ingredients
4 tb Soy sauce, low sodium
1 Red pepper -- julienned
1 tb Cornstarch
2 c Cooked rice
3 Chicken breast halves
1 Can
1 Onion -- minced
2 Garlic cloves -- minced
3 tb Packed brown sugar
1 Green bell pepper --
Julienned
8 oz Pineapple chunks in juice --
1/2 ts Ginger
2 tb Vinegar
Directions
Step #1 Use 3 chicken breast halves to yield about 4 servings.
Step #2 Use more chicken for larger portions.
Step #3 1.
Step #4 To prepare chicken: skin, debone & chop into cubes.
Step #5 2.
Step #6 Mince the garlic cloves.
Step #7 3.
Step #8 Wash, seed & julienne the red & green peppers.
Step #9 4.
Step #10 Do not drain the pineapple.

Step #12 Heat a heavy skillet; add 1 tbsp oil.
Step #13 Saute the peppers, garlic & onion until onion is limp.
Step #14 remove this from skillet & keep warm.

Step #16 Add 1 tbsp oil to skillet & cook chicken cubes until all turn white & are cooked through.
Step #17 This step doesn't take long -- don't overcook.
Step #18 7.
Step #19 Mix cornstarch with soy sauce & some of the pineapple juice in a small bowl.
Step #20 8.
Step #21 mix the chicken with the onion mixture.
Step #22 Add the pineapple chunks & juice along with the brown sugar, vinegar and ground or freshly grated ginger.
Step #23 Heat to boiling, then add the cornstarch mixture.
Step #24 Stir constantly until sauce is thickened and heated through.
Step #25 9.
Step #26 Serve as soon as possible over hot cooked white rice.
