Oyi Namul [cucumber Salad] Recipe

Ingredients
  • 1 c Carrots; slivered
  • 1 1/2 ts Salt
  • 4 c Water
  • 1 c Bamboo shoots; slivered
  • 3 Green onions; sliced
  • 1/2 ts MSG
  • 6 Eggs; beaten
  • 2 c Rice
  • 1 lb Chicken breasts
  • 3 Dried Mushrooms; soaked

Directions
  • Step #1 In a saucepan or rice cooker mix rice & 2 c water.
  • Step #2 Cook until rice is tender.
  • Step #3 Remove Skin & bones from Chicken breasts.
  • Step #4 To make stock, simmer bones in remaining 2 c water 30 mins.
  • Step #5 Strain to remove bones.
  • Step #6 Remove stems from mushrooms.
  • Step #7 Cut mushrooms and chicken into thin strips.
  • Step #8 Add mushrooms, chicken, carrots, bamboo shoots, salt & MSG to stock.
  • Step #9 Simmer 15 mins.
  • Step #10 carefully stir in the eggs & onions.
  • Step #11 Cook over low heat/flame until eggs begin to set.
  • Step #12 Serve over rice -- 6 servings.
