Chili Spiced Chicken Breasts Recipe

Ingredients
  • 1 jalapeno pepper, seeded & finely sliced*
  • 1/4 tsp garlic powder
  • 2 tsps water
  • 1/2 tsp salt
  • 1 garlic clove, minced
  • 1 (14.5 oz) can sliced tomatoes, undrained
  • 3/4 tsp chili powder
  • 1 tsp canola oil
  • 1/8 tsp cayenne pepper
  • 1/2 tsp ground cumin
  • 4 (4 oz) boneless, skinless chicken breast halves
  • 1/4 c sliced green onions
  • 1 tsp cornstarch

Directions
  • Step #1 Combine the first five ingredients; rub over chicken.
  • Step #2 In a nonstick skillet, brown chicken in oil on both sides.
  • Step #3 Add onions, jalapeno & garlic; saute for 1 min.
  • Step #4 Add tomatoes; bring to a boil.
  • Step #5 Reduce heat; cover & let simmer for 15-20 mins or until chicken juices run clear.
  • Step #6 Remove chicken & keep warm.
  • Step #7 In a small bowl, mix cornstarch & water until smooth; stir in theto tomato mixture.
  • Step #8 Bring to a boil; cook & stir for 1 min or until slightly thickened.
