Oysters Bingo (fried Oysters) Recipe

Ingredients
  • Parmesan Cheese; grated
  • Bread Crumbs; dried
  • 2 tb Heavy Cream
  • 1 c Mushrooms; raw, minced
  • Rock Salt
  • 1 1/2 c Chicken Stock
  • 1 1/2 c Shrimp; cooked, sliced
  • 3 tb Butter
  • 3 Dozen Oysters
  • 3 tb Flour; All Purpose
  • 2/3 c White Wine
  • 2 Egg Yolks
  • 2 Onions; minced

Directions
  • Step #1 Melt butter & saute onions until golden brown.
  • Step #2 stir in the flour and cook, stirring, until the mixture is lightly browned.
  • Step #3 slowly stir in stock, wine , mushrooms, & shrimps.
  • Step #4 Cook slowly over low heat/flame, stirring constantly, for 10 mins.
  • Step #5 Open oysters & put them in their deep shells on individual ovenproof baking dishes.
  • Step #6 A bed of rock salt will help the shells stand firmly upright.
  • Step #7 Bake the oysters in their own juices in preheated moderate oven (350F) for about 6 mins.
  • Step #8 Beat egg yolks with cream & beat hot sauce into the mixture.
  • Step #9 Reheat the sauce but do not boil.
  • Step #10 Cover each oyster with some of the sauce & Sprinkle top lightly with equal parts of dry bread crumbs & parmesan cheese.
  • Step #11 Return the oysters to the oven for about 10 mins, until the topping is browned.
