Oysters Rockefeller Recipe

Ingredients
  • White pepper; to taste
  • 1 Egg; beaten slightly
  • 12 md Oysters; see note
  • 1 tb Water
  • 2 oz Bacon; sliced
  • 4 oz Swiss cheese; grated
  • 1 Garlic clove; minced
  • 1/2 pk Puff pastry
  • 1/4 c Onion; sliced fine
  • 1 oz Hazelnut liqueur
  • 2 oz Asiago cheese; grated
  • 1/2 c Heavy cream
  • 1/2 c White wine
  • 10 oz Spinach, frozen; sliced
  • 1/2 ts Thyme

Directions
  • Step #1 Recipe by: Randy Pollak In a medium saucepan, add frozen spinach and wine.
  • Step #2 Cook covered over low heat/flame until done.
  • Step #3 Cool & drain by squeezing spinach with hands or cheesecloth, reserving liquid.
  • Step #4 In a medium saute pan, then add onions and garlic, cook bacon until almost done, continue cooking until onions are golden.
  • Step #5 Remove bacon mixture from pan & add cooking liquid from spinach.
  • Step #6 Open oysters (be sure to keep the 1/2 shell you will not be using near to 1/2 shell containing oyster) draining liquid into pan also.
  • Step #7 Add thyme and boil over med-heat/flame until reduced to about 1/4 c.
  • Step #8 Add cream and hazelnut liqueur; continue cooking until mixture is thickened and reduced a bit.
  • Step #9 Spice up to taste with white pepper.
  • Step #10 In a medium mixing bowl, mix spinach with bacon mixture & cream sauce.
  • Step #11 Stir until thoroughly mixd.
  • Step #12 Top each oyster with 1-2 tbsps of spinach mixture.
  • Step #13 Sprinkle top with swiss cheese & half as much asiago cheese.
  • Step #14 Roll puff pastry accordingly.
  • Step #15 Using the 1/2 shell as a template, set on top of pastry & cut out, then lift the piece of pastry & put on top of corresponding oyster.
  • Step #16 Continue doing this until all oysters are topped with pastry, discard unneeded 1/2 shells.
  • Step #17 Beat egg with 1 tbsp of water & with a pastry brush, brush tops of each oyster.
  • Step #18 Place oysters on a baking sheet & bake in a 400-degree oven for 30-40 mins or until pastry is a dark golden brown.
  • Step #19 Serve as soon as possible.
