Ingredients
1 c Butter
2 c Heavy cream
Salt & white pepper,taste
32 Shucked oysters with juice
2 Large whole garlic cloves
1/2 c Vegetable oil
Directions
Step #1 Separate garlic cloves & place them,unpeeled,in a small oven proof dish.
Step #2 Cut the butter into pieces & place over the garlic.
Step #3 Add the vegetable oil.
Step #4 Cover the dish with foil & bake @ 250 degrees for 2 to 3 hrs or until garlic is very soft.
Step #5 Cool the garlic in the butter oil mixture.
Step #6 When cooled,carefully peel off the skins & set aside the peeled cloves,which will be very soft.
Step #7 Reserve the garlic butter in the refrigerator.
Step #8 Drain off the oysters & reserve the liquid.
Step #9 mix the liquid and the heavy cream;simmer until it reduces to 1 1/2 c.
Step #10 Spice up this with salt & pepper.
Step #11 To assemble: Preheat the oven to 425F degrees.
Step #12 Place 4 oysters & 2 cloves garlic in each of 8 small oven proof ramekins.
Step #13 Pour in enough hot cream to cover.
Step #14 Bake for 15 mins,top this with a small piece of garlic butter & serve as soon as possible.
