Ingredients
  • 3 qt Water
  • Onion
  • 4 lb Beef tongue
  • 2 x Bay leaves
  • 5 x Peppercorns

Directions
  • Step #1 ---SAUCE------ 3 ts Sugar, unsalted 2 c Broth from boiling tongue 1 ts Vinegar 1/2 ts Lemon rind 1/2 c Almonds, blanched; sliced 3 ts Water 1 tb Flour, granulated 1 tb Butter, all purpose 2 ts Lemon juice 1/2 c Raisins Boil tongue with other ingredients until tender, about 2 hrs.
  • Step #2 Cool.
  • Step #3 Remove outside skin & roots.
  • Step #4 Slice thin.
  • Step #5 Save broth.
  • Step #6 Make Sauce.
  • Step #7 Sauce: Carmelize the sugar & water.
  • Step #8 Add butter,flour & broth and boil to the bubbling stage.
  • Step #9 add in the remaining ingredients.
  • Step #10 Add sliced tongue & bring to a boil.
