Chocolate Berry Cheesecake Recipe

Ingredients
  • 1/2 c cranberry juice
  • RASPBERRY SAUCE:
  • 1 (12 oz) package frozen unsweetened raspberries, thawed
  • 3 (8 oz) packages cream cheese, softened
  • 2 c semisweet chocolate chips, melted & cooled
  • 1/2 c sugar
  • 1/2 c heavy whipping cream
  • 2 tbsps butter, melted
  • 2 tsps cornstarch
  • 2 tbsps sugar
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
  • 4 eggs, lightly beaten
  • 1 c crushed chocolate wafers

Directions
  • Step #1 Combine wafer crumbs & butter.
  • Step #2 Press onto the bottom of a greased 9-in.
  • Step #3 springform pan; set aside.
  • Step #4 In a large mixing bowl, beat cream cheese on lowish speed until smooth.
  • Step #5 Combine sugar & cornstarch; beat into cream cheese.
  • Step #6 Stir in the chocolate, cream & vanilla.
  • Step #7 Add eggs; beat on low just until mixd.
  • Step #8 Pour into prepared pan.
  • Step #9 Place on a double thickness of heavy-duty foil (about 16 in.
  • Step #10 square).
  • Step #11 Securely wrap foil around pan.
  • Step #12 Place in a large baking pan.
  • Step #13 Add 1 in.
  • Step #14 of hot water to larger pan.
  • Step #15 Bake at 325F degrees F for 55-60 mins or until center is just set.
  • Step #16 Cool on a wire rack for 10 mins.
  • Step #17 Carefully run a knife around edge of pan to loosen; cool 1 hr longer.
  • Step #18 Refrigerate for 4 hrs or overnight.
  • Step #19 In a saucepan, mix sugar, cornstarch & cranberry juice until smooth.
  • Step #20 Bring to a boil over med-heat/flame; cook & stir for 1 min.
  • Step #21 Remove from heat; stir in the raspberries.
  • Step #22 Cool completely.
  • Step #23 Remove sides of pan.
  • Step #24 Serve cheesecake with raspberry sauce.
  • Step #25 Refrigerate leftovers.
