Pad Thai Prik Recipe

Ingredients
  • 3 tb Oil
  • 1/4 lb Pork or Chicken, ground
  • 1 ts Chili Pepper Flakes
  • 2 tb Tomato Sauce, canned
  • 2 ts Granulated Sugar
  • 2 Tofu Cubes, fried
  • 2 Eggs, beaten
  • 2 ts Rice Vinegar
  • 3 tb Nuoc Mam
  • 7 oz Flat Rice Noodles
  • 1 c Bean Sprouts, rinsed, dried
  • 1 tb Garlic, minced
  • 1/4 lb Shrimps, raw, with shells

Directions
  • Step #1 Place noodles in hot (not boiling) water.
  • Step #2 Let soak for 10 mins, drain.
  • Step #3 In small bowl, tomato sauce, mix Nuoc Mam, & vinegar.
  • Step #4 stir in the sugar to dissolve.
  • Step #5 Heat 2 tbsps of oil in wok or large frypan over high heat; cook garlic & chili pepper flakes for 15 seconds.
  • Step #6 Add pork (or chicken) & shrimp.
  • Step #7 Stir fry until pork and shrimp change colour.
  • Step #8 Add tofu pieces & Nuoc Mam mixture to wok, bring to a boil.
  • Step #9 Add drained noodles & toss until well coated in sauce.
  • Step #10 Transfer to a warm serving platter.
  • Step #11 add in the remaining oil to wok; add eggs & cook for 10 seconds.
  • Step #12 Scramble eggs & add bean sprouts.
  • Step #13 Return noodles to wok & thoroughly stir this to mix eggs with noodles.
  • Step #14 Continue to cook this until eggs are set.
  • Step #15 Arrange noodles on serving plate & garnish with sliced fresh coriander, coarsely sliced peanuts, minced green onions & chilies, sliced dried shrimps.
  • Step #16 Serve as soon as possible.
