Pad Thai Stir-fried Rice Ribbon Noodles Recipe

Ingredients
  • 2 Garlic cloves
  • 4 tb Sugar
  • 8 oz Thai rice noodles -
  • 2 tb White vinegar
  • 1/4 c Thai fish sauce
  • 3 Green onions sliced on the diagonal, including white part
  • 1/4 c White vinegar; plus:
  • 1 ts Paprika
  • 3/4 c Ground peanuts
  • 3/4 lb Bean sprouts
  • 1 tb Roasted red chili peppers
  • 2 Eggs
  • 3 tb Oil
  • 2 tb Dried shrimp
  • 8 oz Tofu

Directions
  • Step #1 [Take some dried red chili peppers & cook them in an ungreased wok over low stirring constantly until they start to brown.
  • Step #2 Grind in a coffee grinder or spice mill.
  • Step #3 ] Instructions: ============= mix first four ingredients & let sit until sugar dissolves.
  • Step #4 Soak rice noodles/sticks in warm water until they are soft but don't disintegrate when pressed, about 40 mins.
  • Step #5 Drain.
  • Step #6 Drain tofu by wrapping it in a clean towel & pressing with a large can of tomatoes, about 30 mins.
  • Step #7 Cut into 1/4 inch cubes.
  • Step #8 Rinse dried shrimp in water & drain.
  • Step #9 Put oil in wok, heat to medium, put in crushed garlic.
  • Step #10 Swirl around for about a min.
  • Step #11 Add noodles & mix around for a min or two.
  • Step #12 Add the tofu & shrimp then as soon as possible add the liquid.
  • Step #13 Keep stirring until the liquid has all been absorbed into the noodles, about a couple of mins.
  • Step #14 Lower heat to low or medium-low.
  • Step #15 Push some of the stuff aside at one end of wok, & break an egg in.
  • Step #16 as soon as possible cover with noodles.
  • Step #17 Do the same at the other end of wok.
  • Step #18 Let the eggs cook undisturbed until the yolks are practically cooked, about three mins.
  • Step #19 ( Carefully peak if unsure.
  • Step #20 ) Slip a slotted spoon under each egg in turn, & bring upward, through the noodles, shaking as you go.
  • Step #21 The idea is to break up the cooked egg into the rest of the mixture into tiny bits.
  • Step #22 Mix in sprouts & green onions.
  • Step #23 Let cook for another two mins.
  • Step #24 Turn off heat.
  • Step #25 Add crushed peanuts & enough roasted red chilies to your desired hotness.
