Pain Perdu (lost Bread) Aka French Toast Recipe

Ingredients
  • 8 To 10 garlic cloves, peeled
  • 5 To 5 1/2 c bread flour
  • 1 pk Dry yeast
  • Temperature
  • butter, room
  • 2 1/4 c Hot water
  • 2 ts Salt
  • 1/3 c Nonfat dry milk
  • 1 tb Sugar

Directions
  • Step #1 lb garlic into a smooth paste in mortar or put through garlic press.
  • Step #2 Mix softened butter with garlic.
  • Step #3 Set aside.
  • Step #4 Grease 2 medium (8x4 inch) loaf pans.
  • Step #5 Measure 3 c flour into mixer bowl & add yeast, salt, sugar & dry milk.
  • Step #6 stir this to mix.
  • Step #7 Using flat beater attachment & with mixer running, pour in water to form thick batter.
  • Step #8 Drop in garlic butter mixture & mix 2 mins at medium speed.
  • Step #9 Add rema When dough clings to flat beater without mixing, attach dough hook.
  • Step #10 Add more flour if necessary to form a soft ball around revolving hook.
  • Step #11 If dough clings to side of bowl, add light Sprinkle tops of flour.
  • Step #12 Knead in the mixer for 10 mins, or turn dough onto floured work surface & knead by hand until dough is soft and elastic.
  • Step #13 Add Sprinkle tops of flour if dough is sticky.
  • Step #14 Place dough in greased bowl, cover tightly with plastic wrap & leave in a warm place until doubled in volume, 45 mins to 1 hr.
  • Step #15 Turn dough onto floured work surface, knead briefly to push out air bubbles and divide in half.
  • Step #16 Press each half into flat oval, about the length of each pan.
  • Step #17 Fold in half lengthwise, pinch seam together, tuck in ends & drop seam side down into baking pa preheat your trusty oven to 375 F.
  • Step #18 Bake dough on middle shelf of oven for 40 mins.
  • Step #19 Loaves will be light brown.
  • Step #20 To test for doneness, turn 1 loaf out of pan & thump bottom crust.
  • Step #21 It should sound hard & hollow.
  • Step #22 If not, return to oven, without pan, for 5 to 10 mins.
  • Step #23 Turn loaves out of pans onto racks to cool.
  • Step #24 Makes 12 slices each.
