Pakoras (savory Fritters) Recipe

Ingredients
  • 1/2 ts Ground Tumeric
  • Juice
  • Vegetable Oil For Frying
  • 1/2 ts Cayenne Pepper
  • Water
  • 1/2 ts Baking Powder
  • 1 1/2 ts Salt
  • 2 ts Ground Coriander
  • [lentil flour)
  • 1 tb Freshly Squeezed Lemon
  • 1 ts Garam Masala --
  • Choice Of Vegetable --
  • 1 1/3 c Besan Or Gram Flou --
  • 2 ts Margarine Or Oil -- melted

Directions
  • Step #1 1 In a large bowl mix the first 9 ingredients with enough water to form a thick batter.
  • Step #2 2 Prepare the vegetable as directed below, & dip into batter, allowing excess to drip off.
  • Step #3 3 In a large saucepan or a deep skillet, heat 2 inches oil over high heat until very hot.
  • Step #4 Add batter-coated vegetables, a few pieces at a time; fry until golden brown (cooking time varies from 3 to 10 mins).
  • Step #5 If oil begins to spatter or smoke, reduce heat to medium.
  • Step #6 4 Drain vegetables on paper towels.
  • Step #7 Serve hot.
  • Step #8 Eggplant: Cut 1 medium unpeeled eggplant into wedges.
  • Step #9 Add 2 tbsps khus-khus (white poppy seeds) to batter, if desired.
  • Step #10 Dip eggplant in batter & fry 8 to 10 mins or until tender.
  • Step #11 Potatoes: Cut 3 large potatoes into thick slices.
  • Step #12 Dip into batter & fry 5 to 8 mins, or until tender.
  • Step #13 Green Peppers: Cut 2 seeded green bell peppers into wedges.
  • Step #14 Dip into batter, & fry 3 to 5 mins, or until tender.
  • Step #15 Mushrooms: Dip 1/2 lb of whole mushrooms into batter.
  • Step #16 Fry 3 to 5 mins, or until tender.
  • Step #17 Onions: Cut 2 large peeled onions into thin slices; Sprinkle top with salt & allow to drain.
  • Step #18 Instead of usind batter, 1 tbsp sliced cilantro, coat onion slices with besan mixed with 4 sliced scallions, & 1 minced green chile (optional).
  • Step #19 (You may coat several slices at a time to form a fritter or pancake.
  • Step #20 ) Fry 3 to 5 mins until tender.
