Pan-fried Brook Trout With Bacon Recipe

Ingredients
  • 2 tb Lemon juice
  • Salt
  • 2 tb Flour
  • 4 Brook trout, with head and tail left on
  • 7 tb Butter
  • 2 tb Chives; minced
  • 3 tb Oil

Directions
  • Step #1 Recipe by: The Fannie Farmer Cookbook Rinse the trout under cold running water & pat dry.
  • Step #2 Dust lightly with flour, & Sprinkle top with salt.
  • Step #3 In a large skillet, melt 3 tbsps of the butter & the oil.
  • Step #4 When it is hot, put in the trout & fry over medium-high heat.
  • Step #5 When browned, turn & brown the other side; each side will take about 3 mins.
  • Step #6 Melt the remaining 4 tbsps of butter with lemon juice & chives in a small saucepan.
  • Step #7 When the trout is done, transfer to a warm platter & pour on the sauce.
