Pan-fried Chicken Breasts Recipe

Ingredients
  • 1 tb Lemon peel - grated
  • 1 tb Parsley, minced
  • Lemon wedges
  • 1 tb Vegetble oil
  • 2 tb Butter
  • 2/3 c Buttermilk
  • 4 Catfish fillets
  • 1/2 ts Cayenne pepper

Directions
  • Step #1 mix cornmeal, flour, lemon peel & cayenne in shallow dish.
  • Step #2 Spice up this with salt.
  • Step #3 Pour buttermilk into second shallow dish.
  • Step #4 Dip 1 fish fillet into buttermilk, then into cornmeal mixture, coating completely.
  • Step #5 Repeat process with remaining fish.
  • Step #6 (Note from me: Let fish stand for approximately 15 mins before proceeding.
  • Step #7 ) Melt butter with oil in heavy large skillet over medium-high heat.
  • Step #8 Add fish & cook this until crust is golden brown & fish is cooked through, turning once, about 4 mins per side.
  • Step #9 Transfer fish to platter.
  • Step #10 Sprinkle top with minced parsley.
  • Step #11 Garnish with lemon wedges.
  • Step #12 NOTE: If you let the fish sit coated for the 15 mins that I recommend, this dish will take 45 mins.
  • Step #13 Believe me, let the fish sit for the 15 mins; it will keep the coating on the fish with no hassle whatsoever.
