Pan-sized Lemon-blackberry Pancakes With Citr Recipe

Ingredients
  • 1 ts Garlic; minced
  • 3 tb Olive oil
  • 2 tb Parsley; finely sliced
  • 2 Squabs
  • Essence
  • 1/4 c Shallots; julienne
  • Salt & black pepper
  • 2/3 c Dried cherries
  • 2 tb Unsalted butter
  • 1 c Creamy grits
  • 1 c Dark chicken reduction
  • Essence

Directions
  • Step #1 Spice up squab with Essence.
  • Step #2 In a saute pan, heat olive oil.
  • Step #3 Sear the squab for 5-6 mins on each side.
  • Step #4 In a saute pan, heat 1 tbsp of olive oil.
  • Step #5 Saute the shallots for 1 min.
  • Step #6 Add the chicken stock.
  • Step #7 Bring the chicken stock to a boil.
  • Step #8 Reduce to a simmer & stir in the the dried cherries & garlic.
  • Step #9 Simmer the sauce for 2 mins.
  • Step #10 Spice up this with salt & pepper.
  • Step #11 Mount in the butter.
  • Step #12 Mound the grits in the center of the palte.
  • Step #13 Arrange the squab against the grits.
  • Step #14 Spoon sauce over the squab.
  • Step #15 Garnish with parsley & Essence.
