Ingredients
  • 1 c Coconut milk
  • 1 tb Fish sauce
  • 1/2 c All purpose flour
  • 1/4 c Thai or sweet basil leaves
  • 1 lb Ground beef
  • 2 tb Creamy peanut butter
  • 2 tb Oil
  • 2 tb Red curry paste
  • 1 tb Sugar

Directions
  • Step #1 Form ground beef into 1" in diameter balls & coat evenly with flour, shaking off any excess flour.
  • Step #2 In a medium saucepan, brown meatballs in oil over low heat/flame.
  • Step #3 The meatballs do not have to be thoroughly cooked.
  • Step #4 Drain on paper towels & set aside.
  • Step #5 Add the curry paste to the remaining oil from frying the meatballs & saute for 1 min over low heat/flame.
  • Step #6 Increase heat to medium, add coconut milk & cook 2-3 mins longer.
  • Step #7 stir in the fish sauce, sugar, peanut butter & mix well.
  • Step #8 Return the meatballs to the pan of curry mixture & cook this until well done.
  • Step #9 Transfer the curry to a serving bowl & Sprinkle top basils.
  • Step #10 serve this with cooked rice.
