Ingredients
1 c Coconut milk
1 tb Fish sauce
1/2 c All purpose flour
1/4 c Thai or sweet basil leaves
1 lb Ground beef
2 tb Creamy peanut butter
2 tb Oil
2 tb Red curry paste
1 tb Sugar
Directions
Step #1 Form ground beef into 1" in diameter balls & coat evenly with flour, shaking off any excess flour.
Step #2 In a medium saucepan, brown meatballs in oil over low heat/flame.
Step #3 The meatballs do not have to be thoroughly cooked.
Step #4 Drain on paper towels & set aside.
Step #5 Add the curry paste to the remaining oil from frying the meatballs & saute for 1 min over low heat/flame.
Step #6 Increase heat to medium, add coconut milk & cook 2-3 mins longer.
Step #7 stir in the fish sauce, sugar, peanut butter & mix well.
Step #8 Return the meatballs to the pan of curry mixture & cook this until well done.
Step #9 Transfer the curry to a serving bowl & Sprinkle top basils.
Step #10 serve this with cooked rice.
