Pancakes Griddle Cakes Or Batter Cakes Recipe

Ingredients
  • 1/4 c Sweet butter
  • 3/4 c AP flour
  • 3 c Buttermilk
  • 1/4 c Wheat germ
  • 1 tb Cornmeal
  • 1 1/2 ts Baking powder
  • 1/2 ts Baking soda
  • 1/4 c Rolled oats
  • 4 lg Eggs
  • pn Salt
  • Butter for skillet
  • 1/4 c Whole-wheat flour

Directions
  • Step #1 Whisk together melted butter, buttermilk & eggs.
  • Step #2 mix all the dry ingredients in a large mixing bowl.
  • Step #3 Make a well in the center.
  • Step #4 Pour in liquid mixture.
  • Step #5 Mix together well, but do not overbeat.
  • Step #6 Allow batter to relax for 15-20 mins.
  • Step #7 Preheat lightly buttered over medium-high flame.
  • Step #8 Ladle 1/2 c batter on skillet to form each pancake.
  • Step #9 Wait till pancakes bubbles & then flip.
  • Step #10 Keep pancakes warm in 250-deg oven with bowl on top.
  • Step #11 Makes 10-12 (large) pancakes.
