Paneer Basmati Pilaf--paneer Pulao Recipe

Ingredients
  • 1 x Garam masala
  • 3 tb Coriander leaves; sliced
  • 1/3 c Currants or sultanas
  • 2 ea Chilies; green, sliced
  • 1 ts Tumeric
  • 2 ea Onions, sliced
  • 1 ea Garnish
  • 1/2 lb Tomatoes; peeled & sliced
  • 1/2 lb Paneer
  • 1/2 c Ghee
  • 1 tb Ginger; grated
  • 1/2 lb Nuts; raw (almonds, cashews
  • 1 x Salt to taste
  • 1 tb Coriander seeds
  • 2 tb Garam masala
  • 4 ea Bay leaves
  • 6 ea Garlic; cloves, crushed
  • 3/4 c Yogurt

Directions
  • Step #1 Fat grams per serving: Approx.
  • Step #2 Cook Time: 1:15 Mix raw nuts with 1 tbsp of ghee & roast in microwave for 5 mins, stirring often to brown even.
  • Step #3 Make a paste by grinding together half the onions, the garlic & coriander seeds.
  • Step #4 Heat the ghee in a frying pan & cut the paneer into 1-inch cubes.
  • Step #5 Fry the paneer to a light brown & remove to drain on a plate.
  • Step #6 Add the remaining onion & the ginger to the ghee in the pan, add the bay leaves & fry until the onion is golden brown.
  • Step #7 Add the tumeric, garam masala & the paste mixture & fry until the ghee starts to separate.
  • Step #8 Add the cheese & currants along with the yogurt, chili,tomato & salt.
  • Step #9 Stir for 5-6 mins over a low heat.
  • Step #10 Pour in water & let simmer carefully until reduced, about 20 mins.
  • Step #11 Sprinkle top with garam masala & coriander before serving.
  • Step #12 serve this with fresh naans or Pappads.
