Cream Of Fresh Asparagus Soup Recipe

Ingredients
  • 1 1/2 c sliced onion
  • 2 c water
  • 4 c hot milk
  • 1 pinch salt
  • 2 tbsps tamari
  • 1 tsp salt
  • 1/2 tsp ground white pepper
  • 6 tbsps all-purpose flour
  • 1 tsp dried dill weed
  • 1 1/2 lbs fresh asparagus
  • 6 tbsps butter

Directions
  • Step #1 Break off & discard tough asparagus bottoms.
  • Step #2 Break off tips; set aside.
  • Step #3 Coarsely chop stalks.
  • Step #4 Cook in skillet over med-heat/flame with onion in butter, salting lightly, for 8 to 10 mins.
  • Step #5 When onions are clear, sprinkle with flour.
  • Step #6 Continue to stir over lowest possible heat 5 to 8 mins.
  • Step #7 Slowly add water or stock, stirring constantly.
  • Step #8 Cook 8 to 10 mins, stirring frequently, until thickened.
  • Step #9 Cool slightly.
  • Step #10 In mixer, puree sauce bit-by-bit with milk until thoroughly smooth.
  • Step #11 Return puree to 3-quart pan, preferably a double boiler.
  • Step #12 Add dill, 1 tsp salt, pepper, & tamari.
  • Step #13 Heat carefully but don't boil.
  • Step #14 As soup heats, cook asparagus tips in boiling water until tender, but still very green, about 2 mins; drain.
  • Step #15 Add whole pieces to soup.
