Panhandle Sandwiches Recipe

Ingredients
  • 8 oz Corn; cream style, 1 cn
  • 4 oz Green chile peppers; sliced
  • 1 c Cheddar; sharp, shredded
  • 2 ea Eggs; lg, beaten
  • 1 ts Baking powder
  • 1 c Dairy sour cream
  • 1 c Corn meal; yellow
  • 1/2 c Vegetable oil

Directions
  • Step #1 Preheat the oven to 400F degrees F.
  • Step #2 & generously grease a 12 c bundt or 9-inch tube pan; set aside.
  • Step #3 In a large bowl, mix the cornmeal & baking powder.
  • Step #4 stir in the the cheddar.
  • Step #5 In a medium bowl, beat the eggs, sour cream, oil, corn & chiles together.
  • Step #6 Add to the cornmeal mixture.
  • Step #7 Stir until just moistened & then spoon the batter into the prepared pan.
  • Step #8 Bake for 40 to 50 mins in the preheated oven until a wooden pick inserted in the center comes out clean.
  • Step #9 Cool on a rack for 10 mins then invert over a serving plate.
