Panseared Grits With Spiced Shrimp & Bacon (t Recipe

Ingredients
  • 1/4 ts Salt
  • Thinly
  • 1 ts Cayenne
  • & julienned
  • 2 Red jalapeno chiles --
  • 1 bn Green onions -- trimmed and
  • Sliced On The Diagon
  • Stemmed, seeded,
  • 2 ts Ground cumin
  • 2 Limes -- Juiced
  • Sliced
  • Stemmed, seeded,
  • 2 Green jalapeno chiles --
  • 10 md Shrimp in the shell -- washed
  • 1 ts Paprika
  • Grits:
  • 1/2 ts Sea salt
  • 4 Garlic cloves -- thinly
  • 2 tb Olive oil
  • 4 sl Bacon -- thinly sliced
  • & Julienned
  • 1/2 ts Freshly ground black pepper
  • 3/4 c Grits
  • 3 3/4 c Boiling water

Directions
  • Step #1 Panseared grits: In a medium saucepan, stir the grits & salt into the boiling water.
  • Step #2 Reduce the heat & let simmer, for about 10 mins, covered, stirring every once in awhile.
  • Step #3 remove this from the heat & pout into a buttered 8x8-inch dish.
  • Step #4 Let cool until firm.
  • Step #5 remove this from the dish and cut into quarters.
  • Step #6 Fry the bacon in a large heavy skillet over medium heat.
  • Step #7 With slotted spoon, remove the bacon & drain on paper towels, reserving the fat in the pan.
  • Step #8 In the same skillet, sear the quartered grits over high heat until golden on both sides.
  • Step #9 With a spatula, transfer to a platter.
  • Step #10 mix the salt, pepper, cumin, paprika, and cayenne in a bowl.
  • Step #11 Add the shrimp & toss to coat evenly.
  • Step #12 Wipe the skillet clean & heat the olive oil over high heat.
  • Step #13 Saute the shrimp 1 to 2 mins.
  • Step #14 Toss in the jalapenos, green onion, garlic and reserved bacon & cook 1 min longer.
  • Step #15 remove this from heat & stir in the the lime juice.
  • Step #16 Scatter over the seared grits & serve.
  • Step #17 Yield: 2 to 4 servings 10/5/96 show.
