Papa Joe's Cucumber & Red Onion Soup Recipe

Ingredients
  • 1/2 c Fresh dill weed- sliced
  • 3 c Red onions
  • 1/2 c Lemon juice
  • 3 tb Sugar
  • 2 tb Salt
  • 5 c Cucumbers
  • 6 c Sour cream

Directions
  • Step #1 This is from Alice Brock at Alice's Restaurant.
  • Step #2 Yes, THAT one.
  • Step #3 Peel & slice cucumbers as thin as you can.
  • Step #4 Peel & slice red onions thin as you can.
  • Step #5 (It's easier if you cut the onion in half & slice cut side down) Use a deep 1 gallon bowl or crock.
  • Step #6 Alternate layers of cukes and onions with Sprinkle tops of the salt & sugar between each layer.
  • Step #7 This will draw out the juices that make it soup.
  • Step #8 Pile sour cream on top.
  • Step #9 DO NOT STIR.
  • Step #10 Cover & put in the fridge for 24 hrs or more.
  • Step #11 To serve, add the fresh dill weed & lemon juice & stir it up.
  • Step #12 Add more lemon juice or sugar to taste.
  • Step #13 Cool & refreshing, this is just perfect when it is too hot to cook, & cucumbers are running wild.
