Papaya Habanero Salsa Recipe

Ingredients
  • 2 tb Dark brown sugar
  • 8 Egg yolks
  • 1/2 c Sugar
  • 2 1/2 c Milk
  • 6 Whole eggs
  • 3 tb Butter
  • 2 tb Brandy
  • 2 md Papayas, peeled, seeded, halved & sliced
  • 6 Butter cookies

Directions
  • Step #1 preheat your trusty oven to 350 degrees (F).
  • Step #2 In a skillet, melt the butter and add the sliced papaya.
  • Step #3 Sprinkle top with brown sugar & brandy.
  • Step #4 Saute until the papaya is very soft.
  • Step #5 remove this from heat & cool.
  • Step #6 place this in the container of a mixer & puree.
  • Step #7 Crumble the butter cookies and stir in theto the papaya mixture.
  • Step #8 Spoon into the bottom of a 8 inch square baking pan.
  • Step #9 In a medium-sized bowl, beat the egg yolks and whole eggs until slightly thickened.
  • Step #10 Heat the milk & sugar together & bring it to a boil.
  • Step #11 remove this from heat.
  • Step #12 Pour the milk slowly into the eggs, stirring constantly until well mixed.
  • Step #13 Pour over papaya in the baking pan.
  • Step #14 Cover with foil.
  • Step #15 Bake in the preheated oven for 20 to 25 mins or until an inserted knife comes out clean.
