Ingredients

1/2 ts Salt
6 oz Red bell pepper -- seeds and
1 1/2 oz Green onions -- minced
2 tb Fresh lime juice

2 lb Papayas -- washed
Removed
Freshly ground pepper
1 1/2 oz Jalapenos -- seeds removed
6 oz Green bell pepper -- seeds
Removed
1/2 ts Lime zest -- minced

Directions

Step #1 Counts: 2 papayas, 2 jalapenos, 1 each bell peppers, 4 green onions.
Step #2 Halve papayas, remove seeds & peel.
Step #3 Cut papaya into 1/2-inch dice; cut bell peppers into 1/4-inch dice.
Step #4 Mince jalapenos.
Step #5 Mix all ingredients together in large bowl.
Step #6 Serve over grilled fish on top of smashed potatoes.
