Pappa's Italian Anchovy Garlic Spread Recipe

Ingredients
  • Olive oil
  • Salt & pepper
  • 6 c Stock
  • 2 lg Garlic cloves, minced
  • 10 ea Basil leaves
  • 1 lb Stale country bread, cut - into chunks
  • 3/4 c Olive oil
  • 2 lb Ripe tomatoes, peeled, - seeded & sliced

Directions
  • Step #1 Spice up the stock with the salt & pepper & bring to a boil.
  • Step #2 stir in the the bread & cook over med-heat/flame for 2 to 3 mins.
  • Step #3 Heat the olive oil in a large heavy pot over low heat/flame.
  • Step #4 Add the garlic & saute for 3 to 4 mins but do not let it burn.
  • Step #5 stir in the the tomatoes & the basil & let simmer for 5 mins.
  • Step #6 Add the tomatoes to the stock & cook, uncovered, for 3 to 4 mins.
  • Step #7 remove this from the heat & let this stand for 1 hr so that the flavours can mingle.
  • Step #8 Serve hot or cold, drizzled with a little olive oil over the top of each serving.
