Parmesan Potato Puffs Recipe

Ingredients
  • 1/2 c Grated Parmesan
  • 1/2 ts Pepper
  • 12 Med. potatoes, peeled and quartered
  • 3 lg Eggs, lightly beaten
  • 1 ts Salt
  • 1/4 c sliced parsley
  • 1/2 c Butter
  • 1 c Milk

Directions
  • Step #1 Heat oven to 350 degrees.
  • Step #2 Lightly grease a shallow 3 qt.
  • Step #3 baking dish.
  • Step #4 Cook potatoes in water to cover 15-20 min.
  • Step #5 until tender.
  • Step #6 Drain well & return potatoes to pot.
  • Step #7 Add butter to potatoes & mash until butter melts.
  • Step #8 Add milk, parsley, cheese, eggs, salt & pepper & mash until smooth.
  • Step #9 Spoon into prepared dish.
  • Step #10 At this point, it can be put in the fridged.
  • Step #11 Bring to room temp.
  • Step #12 before baking.
  • Step #13 Bake uncovered 45-50 mins until puffed & golden.
  • Step #14 Makes about 12 servings.
