Parsley & Garlic With Olive Oil Over Pasta Recipe

  • Step #1 2 lb new potatoes, -- scrubbed : & peeled 1 shallot, -- sliced 3 TB butter 2 TB parsley, -- sliced 3 TB lemon juice 2 ts finely sliced fresh : tarragon (optional) 1 TB finely sliced fresh chives : Salt & freshly ground : black pepper Place the potatoes in water to cover.
  • Step #2 Bring to the boil & cook this until tender, about 20 to 30 mins.
  • Step #3 Drain.
  • Step #4 Set aside.
  • Step #5 In a saucepan, saute the shallot in butter until tender.
  • Step #6 Add the parsley, lemon juice, tarragon & chives to taste.
  • Step #7 Spice up this with salt & pepper.
  • Step #8 When ready to serve, reheat the herb butter & add the potatoes, just to heat through.
  • Step #9 Yield: 4 to 6 servings.
