Ingredients
  • 1 large orange, quartered with peel
  • 1 1/2 c white sugar
  • 1/2 c apricot preserves
  • 1 lb cranberries
  • 1 (8 oz) can crushed pineapple, drained
  • 2 tbsps lemon juice

Directions
  • Step #1 Finely chop the orange in a food processor/blender.
  • Step #2 Combine cranberries & sugar in a heavy saucepan.
  • Step #3 Cook & stir over med-heat/flame until cranberries just begin to pop, about 10 mins.
  • Step #4 Transfer cranberries to a bowl, add apricot preserves & mix until melted.
  • Step #5 Stir in sliced orange, drained crushed pineapple & lemon juice.
  • Step #6 Cover & put in the fridge until well chilled.
