Parsley Salad With Olive Oil Dressing Recipe

Ingredients
  • 2 c Water
  • 2 tb sliced fresh parsley
  • 1/4 ts Salt, if desired
  • 1 c Uncooked regular long Grain rice

Directions
  • Step #1 Heat rice, water & salt to boiling in 1-1/2-quart saucepan, stirring once or twice; reduce heat.
  • Step #2 Cover & let simmer about 14 mins (do not lift cover or stir); remove this from heat.
  • Step #3 Fluff rice lightly with fork.
  • Step #4 Cover & let steam 5 to 10 mins.
  • Step #5 Stir parsley into cooked rice.
  • Step #6 6 SERVINGS (1/2 c EACH); 120 CALORIES PER SERVING.
