Parsnip & Apple Soup (irish) Recipe

Ingredients
  • 1 lb Parsnips, thinly sliced
  • 1 Large clove garlic, crushed
  • 1 tb Butter
  • 1 lb Apples, peeled/cored/sliced
  • sliced chives or parsley
  • 1 Med. onion, sliced
  • Salt & pepper
  • 150 ml Cream
  • 1/2 ts Cardamom
  • 1 1/4 l Beef or chicken stock
  • 1 ts Ground cumin
  • 1 ts Ground coriander
  • 2 ts Curry powder

Directions
  • Step #1 Heat the butter, add the parsnips, apples, & when foaming, and onions.
  • Step #2 Soften them but do not let them color.
  • Step #3 Add the curry powder, the spices & garlic; cook for about 2 mins, stirring well.
  • Step #4 Pour in the stock slowly, stirring until well mixed.
  • Step #5 Cover & let simmer carefully for about half an hr, or until the parsnips are quite soft.
  • Step #6 Taste for Spice uping.
  • Step #7 Sive or liquidize, & if it seems too thick, dilute with a little stock or water.
  • Step #8 Add the cream & reheat, but do not let it boil.
  • Step #9 Serve garnished with sliced chives or parsley.
