Ingredients
3 tb Butter
1 ts Honey
sliced fresh parsley
Salt
Freshly ground black pepper
1 lb Medium parsnips, peeled and halved lengthwise
2 tb Dijon mustard
3 tb Bourbon
Directions
Step #1 (From "Greene on Greens" by Bert Greene, Workman Publ.
Step #2 , New York, 1984).
Step #3 Preheat the oven to 375'F.
Step #4 Cook the parsnips in boiling salted water until just tender, about 5-8 mins.
Step #5 Drain.
Step #6 cut each parsnip lengthwise into 1/4"-thick slices.
Step #7 Place them in a buttered shallow baking dish in a single layer.
Step #8 Bake 10 mins.
Step #9 Melt the butter in a small saucepan over low heat/flame.
Step #10 Slowly add the mustard, honey and bourbon.
Step #11 Cook 5 mins.
Step #12 Brush this sauce evenly over the baked parsnips.
Step #13 Sprinkle top with salt & pepper to taste.
Step #14 Place the parsnips under a preheated broiler to lightly brown, about 1 min.
Step #15 Sprinkle top with parsley & serve.
