Parsnips With Almonds Recipe

Ingredients
  • 3 tb Butter
  • 1 ts Honey
  • sliced fresh parsley
  • Salt
  • Freshly ground black pepper
  • 1 lb Medium parsnips, peeled and halved lengthwise
  • 2 tb Dijon mustard
  • 3 tb Bourbon

Directions

  • Step #3 Preheat the oven to 375'F.
  • Step #4 Cook the parsnips in boiling salted water until just tender, about 5-8 mins.
  • Step #5 Drain.
  • Step #6 cut each parsnip lengthwise into 1/4"-thick slices.
  • Step #7 Place them in a buttered shallow baking dish in a single layer.
  • Step #8 Bake 10 mins.
  • Step #9 Melt the butter in a small saucepan over low heat/flame.
  • Step #10 Slowly add the mustard, honey and bourbon.
  • Step #11 Cook 5 mins.
  • Step #12 Brush this sauce evenly over the baked parsnips.
  • Step #13 Sprinkle top with salt & pepper to taste.
  • Step #14 Place the parsnips under a preheated broiler to lightly brown, about 1 min.
  • Step #15 Sprinkle top with parsley & serve.
