Party Nibbles: Mushroom Nests Recipe

Ingredients
  • 2 tb Fresh parsley, minced
  • 3 tb Lemon juice
  • 1 ts Dried tarragon
  • 1 tb Olive oil
  • Pepper
  • 1 lb Skinless salmon fillet 1-inch thick
  • Salt

Directions
  • Step #1 [2 tb sliced fresh dill may be used in lieu of tarragon] Cut salmon into 1/4-inch thick slices about 4 inches in length.
  • Step #2 Soak wooden skewers for about 30 mins in cold water.
  • Step #3 Thread salmon onto skewers.
  • Step #4 place this in single layer in shallow dish.
  • Step #5 mix lemon juice, oil & tarragon; drizzle over salmon, turning skewers once to coat both sides.
  • Step #6 Sprinkle top with parsley.
  • Step #7 let this stand for 15 mins.
  • Step #8 Arrange skewers on lightly greased broiling pan or bakeing sheet.
  • Step #9 Sprinkle top with salt & pepper to taste.
  • Step #10 Broil for 2-3 mins or just until opaque.
