Cheddar Harvest Fondue Recipe

Ingredients
  • 2 c Milk
  • 1/4 c sliced onion
  • 1/2 c Sliced celery
  • 1/2 c Sliced carrots
  • 1 1/2 c Cubed fully cooked ham
  • 2 c Water
  • 1/4 c Butter or margarine
  • 2 c Shredded sharp cheddar cheese
  • 1/4 ts Pepper
  • 1 cn Whole kernal corn, drained
  • 1 ts Salt
  • 1/4 c All-purpose flour
  • 2 c Cubed peeled potatoes

Directions
  • Step #1 In a large saucepan, celery, carrots, bring the water, onion, potatoes, salt & pepper to a boil.
  • Step #2 Reduce heat; cover & let simmer for 8-10 mins or until vegetables are just tender.
  • Step #3 remove this from the heat; do not drain.
  • Step #4 Meanwhile, in a medium saucepan, melt the butter.
  • Step #5 mix in flour.
  • Step #6 Add the milk all at once; cook & stir until thickened & bubbly.
  • Step #7 Add cheese & stir until melted.
  • Step #8 stir in theto the undrained vegetables, return large saucepan to the heat.
  • Step #9 Add corn and ham; heat through, stirring every once in awhile.
