Ingredients
2 c white sugar
1 tbsp baking powder
2 tsps vanilla extract
1 egg
1 c sour cream
1/2 c unsalted butter
3/4 c butter, softened
1 c semisweet chocolate chips
2 c all-purpose flour
1/2 c water
1/2 tbsp baking soda
3 tbsps strong brewed coffee
2 c semisweet chocolate chips
5/8 c unsweetened cocoa powder
Directions
Step #1 Preheat the oven to 350 degrees F (175 degrees C).
Step #2 Grease & flour two 9 inch round cake pans.
Step #3 Sift together the flour, baking powder, baking soda & cocoa, set aside.
Step #4 In a medium bowl, add the 1/2 c butter, beat the sugar & egg until light, beat until smooth.
Step #5 Stir in the sour cream, water, & vanilla.
Step #6 Add dry ingredients, mix slowly until flour mixture is absorbed.
Step #7 Fold in the 2 c chocolate chips.
Step #8 Divide the mixture evenly between the two prepared pans.
Step #9 Bake for 35 to 40 mins until cake tests done with a toothpick.
Step #10 Place pans of cake on wire racks to cool for 10 mins before removing from pans to cool completely.
Step #11 When cool frost with the following frosting recipe.
Step #12 To make the frosting, melt the remaining 1 c chocolate chips with the coffee in a small saucepan over low heat/flame.
Step #13 Remove pan from heat, & beat in the 3/4 c of butter, 1 tbsp at a time, until smooth.
Step #14 Set pan in a bowl of ice & beat until icing is spreadable & holds it's shape.
Step #15 Cool completely before frosting cake.
