Cheese Nuggets Recipe

Ingredients
  • 3/4 ts Grated lemon peel
  • 1 c Canned pumpkin
  • 3/4 c Sugar
  • 12 oz Cream cheese, at room temp.
  • 1/2 ts Vanilla extract
  • 4 oz Can shelled pecan halves
  • 3 Eggs, at about room temp
  • 3/4 ts Grated orange peel
  • 1/4 c Sugar
  • 1 1/2 tb Flour
  • 1/4 c Melted butter or margarine
  • 1 c Graham cracker crumbs
  • 1/2 ts Cinnamon

Directions
  • Step #1 1.
  • Step #2 mix graham cracker crumbs, & sugar in a heat-resistant, melted butter, cinnamon, non-metallic, 8 1/2-inch round cake pan.
  • Step #3 Press cracker crumb mixture onto bottom & sides of pan.
  • Step #4 Heat uncovered, in Microwave Oven 2 mins.
  • Step #5 Allow to stand & cool.
  • Step #6 2.
  • Step #7 Cream cream cheese until smooth in a large, heat-resistant, non-metallic bowl.
  • Step #8 3.
  • Step #9 add in the remaining ingredients & beat until smooth.
  • Step #10 Heat, un- covered, in Microwave Oven 4 mins, stirring every min.
  • Step #11 4.
  • Step #12 pour this into crust & heat an extra 6 mins or until custard is puffed around edges & still slightly soft in center.
  • Step #13 5.
  • Step #14 Chill at least 5 hrs before serving.
  • Step #15 Arrange pecan halves on top of pie before serving.
