Cheese-chile Rice Cups Recipe

Ingredients
  • 1 1/2 ts Sugar
  • 1/2 c Sugar
  • 1/2 c Salad Oil
  • Filling:
  • 2 ts Cornstarch
  • 1/2 ts Salt
  • 1 c Sour Cream
  • 1 1/2 c Flour
  • 1 lb Cottage Cheese
  • Crust:
  • 2 tb Milk, cold
  • 1 cn Cherry Pie Filling
  • 2 Eggs,beaten

Directions
  • Step #1 Crust: Mix flour, with fork, salt,with fingers, until it is damp, beat until mixed well ;add to flourmix at once & start mixing all together with fork, in measuring c mix milk with oil, than ,sugar together in 8 inch pieplate, spread out the dough over the whole pieplate.
  • Step #2 Prick entire surface a couple times with fork.
  • Step #3 Filling: Put cottage cheese in mixer & mix until smooth, mix in sour cream, eggs, sugar & cornstarch.
  • Step #4 mix all well.
  • Step #5 Spread filling over crust & bake in 350 degrees F, oven for 50 mins.
  • Step #6 Cool; than spread the piefilling on top.
  • Step #7 Refridgerate until serving.
  • Step #8 This is a low fat version of cheese cake & you can put blueberry pie filling on top if you want too.
