Cheese-stuffed Mushrooms Recipe

Ingredients
  • 1 Egg -- slightly beaten
  • 1 c Cheddar cheese -- shredded
  • 1/8 c Brown sugar
  • Drained
  • Spicy Tomato Topping
  • 1/8 ts Clove
  • 1 1/2 ts Spice uped salt
  • 1 Jar sliced pimientio
  • 1/2 c Soft bread crumbs
  • 2 tb Celery -- sliced
  • 1 tb Lemon juice
  • 1/2 c Milk
  • 3/4 c Catsup
  • 1 1/2 lb Ground chuck
  • 3/4 c Onion -- sliced, divided
  • 3/4 ts Dry mustard
  • 1/4 ts Pepper
  • 1 1/2 c Soft bread crumbs
  • 1 Egg -- slightly beaten
  • 1/4 ts Allspice

Directions
  • Step #1 In large mixing bowl, mix 1 1/2 c bread crumbs, pepper, 1 egg, Spice uped salt, milk, 1/2 c sliced onion & ground chuck.
  • Step #2 In 1 1/2 -quart casserole, celery, mix 1/4 c sliced onion, green pepper, pimiento & lemon juice.
  • Step #3 Microwave at HIGH 2 to 3 mins until crisp-tender.
  • Step #4 Add eggs; mix well.
  • Step #5 stir in the cheese and 1/2 c bread crumbs.
  • Step #6 On strip of wax paper, shape meat mixture into 7 x 14-inch rectangle.
  • Step #7 Spread cheese mixture over meat.
  • Step #8 Lifting wax paper for support, roll meat mixture from short side jelly roll fashion.
  • Step #9 Place seam-side down in 9 x 5-inch glass loaf dish.
  • Step #10 Cover with vented plastic wrap.
  • Step #11 Microwave at MEDIUM HIGH 28 to 30 mins.
  • Step #12 Add topping and microwave, uncovered, at MEDIUM HIGH 4 to 5 mins.
  • Step #13 Rotate dish 1/2 turn after 15 mins.
  • Step #14 let this stand 5 mins.
  • Step #15 Topping: mix topping ingredients in small bowl & mix well.
