Cheesecake (restaurant-style) Recipe

Ingredients
  • 1/4 lb Butter
  • ---CRUST------
  • 1 ts Cinnamon
  • 6 oz Zwieback cookies
  • 3/4 c Sugar

Directions
  • Step #1 CAKE FILLING--- 1 1/2 lb Cream cheese 1 c Sugar 4 Egg whites 1 1/2 ts Vanilla--TOPPING----- 2 c Sour cream 2 tb Sugar 1/2 ts Vanilla 1/3 c Almonds, slivered 1 tb Butter preheat your trusty oven to 375 degrees F.
  • Step #2 Use the steel blade of the food processor; drop the zwieback cookies into the processor, one at a time, & process until fine.
  • Step #3 Add the sugar & cinnamon.
  • Step #4 Melt butter & pour in.
  • Step #5 Process 2 seconds or until crumbs are moistened.
  • Step #6 Reserve 3/4 c of crumbs.
  • Step #7 Press the rest into bottom & sides of a buttered 10-inch springform pan.
  • Step #8 Bake 10 mins.
  • Step #9 put in the fridge 30 mins.
  • Step #10 Wash the food-processor bowl.
  • Step #11 preheat your trusty oven to 350 degrees F.
  • Step #12 Cut the cheese into 1 oz pieces.
  • Step #13 Process with steel blade until smooth.
  • Step #14 In another bowl, beat the eggs until stiff.
  • Step #15 mix sugar into the egg whites & pour this into processor bowl.
  • Step #16 Process with cream cheese until smooth.
  • Step #17 Add vanilla.
  • Step #18 Process for 2 seconds.
  • Step #19 Pour mixture into crust & bake for 25 mins.
  • Step #20 preheat your trusty oven to 475 degrees F.
  • Step #21 Mix together the sour cream, sugar and vanilla.
  • Step #22 Pour & spread over the top of cake.
  • Step #23 Sprinkle top reserved crumbs to cover topping.
  • Step #24 Arrange slivered almonds over the crumbs.
  • Step #25 Bake for 7 mins.
  • Step #26 put in the fridge overnight.
  • Step #27 The next morning open the springform pan and knock off excess crust.
  • Step #28 Enjoy.
  • Step #29 NOTES: food processor/blender cheesecake -- This is reputedly the 1980 A&S Cheesecake contest award winner.
  • Step #30 I have an nth generation copy of the recipe, but it is the best cheesecake I have tasted.
