Cheesy Garden Tuna-filled Crepes (microwave R Recipe

Ingredients
  • 15 g Butter or margarine
  • Freshly ground black pepper
  • Salt
  • 2 sm -Crab, or...
  • 213 g Canned red Alaska salmon
  • 15 g Plain flour
  • 1 lg Crab
  • 1 tb Freshly sliced parsley
  • 75 g Fresh Parmesan, grated
  • Milk for stock
  • 2 Fresh tomatoes; skinned de-seeded & sliced

Directions
  • Step #1 (ask the fishmonger to dress it for you, but retain the small legs for garnish) Drain the can of salmon, reserving the juice.
  • Step #2 Make the juice up to 150ml (1/4 pint) with milk.
  • Step #3 Set aside.
  • Step #4 Put the salmon & crab meat into a bowl.
  • Step #5 Melt the butter in a pan & stir in the the flour.
  • Step #6 slowly add the fish & milk stock to make a smooth sauce.
  • Step #7 Add the sliced tomatoes & parsley, Spice up well.
  • Step #8 Mix the sauce into the crab & salmon, then pile this mixture into two individual serving dishes.
  • Step #9 Sprinkle top the Parmesan over the top of the salmon mixture & place under a moderate grill for 6-8 mins or until the cheese is golden brown.
  • Step #10 Serve garnished with two or three crab legs & new potatoes.
  • Step #11 Serves 2.
