Cheesy Pita Salad Sandwiches Recipe

Ingredients
  • 1 c Sliced fresh Mushrooms
  • 1 ts Dried Basil, crushed
  • 3/4 c Lo-fat Cottage cheese,draine
  • 1 tb Cornmeal
  • 1 1/2 c Flour
  • 1 pk Active dry Yeast
  • 2 tb Grated Parmesan Cheese
  • Med Green / Sweet Red Pepper
  • Clove Garlic, minced
  • 1 c Shredded Mozzarella Cheese
  • Egg
  • 1 ts Cooking oil
  • 1/2 ts Sugar

Directions
  • Step #1 part-skim For crust, mix 3/4 c of the flour, the yeast, sugar, & 1/4 t salt.
  • Step #2 Add oil & 1/2 c warm water (120-130 deg).
  • Step #3 Beat with electric mixer on lowish speed 30 seconds, scraping the bowl.
  • Step #4 Beat on high speed 3 mins.
  • Step #5 stir in the as much of the remaining flour as you can.
  • Step #6 Then, knead in enough remaining flour to make a moderately stiff dough that is smooth & elastic (5 mins total).
  • Step #7 Shape into a ball.
  • Step #8 place this in a greased bowl; turn once.
  • Step #9 Cover; let rise in a warm place till double (about 30 mins).
  • Step #10 Punch down.
  • Step #11 Cover; let rest 10 mins.
  • Step #12 On a floured surface roll dough into a 14" circle.
  • Step #13 Place on a pizza pan sprayed with Pam & Sprinkle topd with the cornmeal.
  • Step #14 Build up edges slightly.
  • Step #15 Bake crust in 425F deg F oven about 10 mins or lightly browned.
  • Step #16 In a mixer mix cottage cheese, garlic, basil, egg, Parmesan cheese, & 1/8 t pepper.
  • Step #17 Cover; mix till smooth.
  • Step #18 Spread over hot crust.
  • Step #19 Cut green pepper into rings.
  • Step #20 Place atop pizza with mushrooms.
  • Step #21 Sprinkle top with Mozzarella.
  • Step #22 Bake in 425F deg oven till hot.
  • Step #23 Per serving: 224 calories, 26 g carbohydrates, 7 g fat, 15 g protein, 60 mg cholesterol, 356 mg sodium, 212 mg potassium.
