Chef's Barbeque Sauce Recipe

Ingredients
  • 2 tb Butter
  • 1 Sprig thyme
  • 4 Sprigs fresh rosemary
  • 6 c Beef broth
  • 10 lg Portobello mushrooms, sliced
  • 1 ts sliced garlic
  • 1 c Olive oil
  • 1 tb Cracked black Pepper
  • 4 Pork tenderloins
  • Salt & pepper

Directions
  • Step #1 Place tenderloin in olive oil with garlic, half the rosemary and cracked pepper.
  • Step #2 Marinate between four & 24 hrs in the fridge.
  • Step #3 Remove tenderloin & drain.
  • Step #4 Preheat heavy skillet, sear pork on all sides, add mushrooms & place this in shallow roasting pan & bake this at 350F for 15-20 mins.
  • Step #5 In saucepan, reduce beef stock with herbs to half volume.
  • Step #6 Spice up this with salt & pepper & whisk in butter.
  • Step #7 Check Spice uping to taste.
  • Step #8 Remove pork from oven, slice across bias and place slices on a plate.
  • Step #9 Cover with sauce, then top this with mushrooms.
