Cherokee Succotash Recipe

Ingredients
  • 1 c Fresh or frozen okra
  • & sliced
  • 1 lb Venison or beef short ribs
  • 2 Ripe tomatoes, seeded and
  • Salt & ground pepper to
  • Taste
  • Or shanks
  • 1/2 c Fresh or frozen corn
  • 1/4 c sliced celery
  • 2 lg Onions, quartered
  • 1/2 c sliced potatoes
  • sliced
  • 1/2 c Sliced carrots
  • 2 qt Water
  • 1 lg Sweet bell pepper, seeded
  • Kernels

Directions
  • Step #1 Put meat, water, & onions in a heavy soup kettle.
  • Step #2 Cover & bring to a boil over high heat.
  • Step #3 Reduce heat to low & let simmer for 3 hrs.
  • Step #4 Remove meat, & discard bones, let cool, returning meat to pot.
  • Step #5 Stir in remaining vegetables & let simmer, partially covered for 1 1/2 hrs.
  • Step #6 Spice up this with salt & pepper.
  • Step #7 Serves 4 to 6.
