Ingredients
1 lb Sausage
1/4 c Vegetable oil
28 oz Can whole tomatoes
1 ea Crust
1 ea Filling
1 lb Mozzarella, sliced
3 ts Dried oregano, -or-
2 ea Garlic cloves, minced
4 tb Grated Parmesan cheese
1 c Warm water
1/2 c Coarse ground cornmeal
3 1/2 c Flour
1 ts Salt
5 ea Basil leaves, shredded
1 pk Active dry yeast
Directions
Step #1 Drain & coarsely crush the tomatoes.
Step #2 Remove sausage from casing and crumble.
Step #3 Pour the warm water into a large mixing bowl & dissolve the yeast with a fork.
Step #4 Add 1 c of flour, all of the cornmeal, and, salt, & vegetable oil.
Step #5 Mix well with a spoon.
Step #6 Continue stirring in the rest of the flour 1/2 c at a time, until the dough comes away from the sides of the bowl.
Step #7 Flour your hands & the work surface and kneed the ball of dough until it is no longer sticky.
Step #8 Let the dough rise in an oiled bowl, for 45 to 60 mins in a warm place, sealed with plastic wrap, until it is doubled in bulk.
Step #9 Punch it down & kneed it briefly.
Step #10 Press it into an oiled 15-inch deep dish pizza pan, until it comes 2 inches up the sides & is even on the bottom of the pan.
Step #11 Let the dough rise 15-20 mins before filling.
Step #12 Preheat the oven to 500 degrees.
Step #13 While the dough is rising, prepare the filling.
Step #14 Cook the crumbled sausage until it is no longer pink, & drain it of it's excess fat.
Step #15 Drain & chop the tomatoes.
Step #16 When the dough has finished its second rising, lay the cheese over the dough shell.
Step #17 Then distribute the sausage & garlic over the cheese.
Step #18 top this with the tomatoes.
Step #19 Sprinkle top on the Spice upings & Parmesan cheese.
Step #20 Bake for 15 mins at 500 degrees.
Step #21 Then lower the temperature to 400F degrees & bake for 25 to 35 mins longer.
Step #22 Lift up a section of the crust from time to time with a spatula to check on its color.
Step #23 The crust will be golden brown when done.
Step #24 Serve as soon as possible.
