Chicken & Sweet Potatoes Recipe

Ingredients
  • 2 c Mashed, cooked sweet potatoe
  • 1/3 c Skimmed evaporated milk
  • 2 tb Brown sugar
  • 1/8 ts Ground nutmeg
  • 3 tb Water
  • 1/4 c Minced onion
  • 3 c Cubed chicken
  • 1/2 ts Ground cinnamon
  • 1 ea 8 oz. can water chestnuts
  • 1 ea 10 oz. cream of chicken soup
  • 1 ea Or white sauce chicken flav
  • 1/4 c Chicken broth

Directions
  • Step #1 Drained, sliced.
  • Step #2 preheat your trusty oven to 350F.
  • Step #3 In a medium size bowl, mix sweet potatoes, brown sugar, cinnamon, nutmeg & milk.
  • Step #4 Spread around the inside edge of a round 10 in.
  • Step #5 casserole, forming a ring.
  • Step #6 In a medium size non stick skillet, heat broth over low heat/flame.
  • Step #7 Add onion & water chestnuts; cook this until tender.
  • Step #8 Add soup or sauce, chicken & 3 tbsps water; cook over med-heat/flame until hot, stirring every once in awhile.
  • Step #9 Spoon chicken mixture into center of sweet potato ring in casserole.
  • Step #10 Bake uncovered, 30 min or until bubbling.
