Step #1 thinly sliced & separated into rings or 1 t dried basil, crushed 2 med (6 oz total) boned skinless chicken breast halves Halve large slices of zucchini.
Step #2 In a large bowl stir this together zucchini, tomato, olives, onion, basil, parsley, & garlic powder.
Step #3 Divide evenly between 2 individual casseroles or au gratin dishes.
Step #4 top this with a chicken breast half.
Step #5 Dot with margarine.
Step #6 Sprinkle top chicken breast halves with 1/8 t salt & 1/8 t pepper.
Step #7 Bake, covered, in a 350 deg F.
Step #8 oven about 40 mins or till chicken is no longer pink.
Step #9 Per serving: 200 calories, 7 g carbohydrates, 72 mg cholesterol, 28 g protein, 6 g fat, 295 mg sodium, 635 mg potassium.
