Chicken & Wild Rice Casserole Recipe

Ingredients
  • 1/2 ts Basil
  • 2 ts Spice uped salt
  • 1/2 ts Coarsely ground black pepper
  • 1/2 c Water or chicken broth
  • 3 md Potatoes - pared, halved lengthwise
  • 2 Celery ribs; in 1" pieces
  • 2 Onions; sliced
  • 3 To 4 lb. whole broiler/fryer - rinsed well
  • 2 Carrots; sliced

Directions
  • Step #1 ---GRAVY------ 1/3 c Flour 1/3 c ;Water 1/2 ts Thyme 1 ts Soy sauce Put vegetables in lightly oiled slow cooker.
  • Step #2 Place whole chicken in the middle of the vegetables.
  • Step #3 Sprinkle top with Spice uped salt, pepper and basil.
  • Step #4 Pour water or broth over all.
  • Step #5 Cover & cook on low for 8 to 10 hrs, or on high for 3 1/2 to 4 hrs.
  • Step #6 If you cook it on high, increase broth or water to 1 c.
  • Step #7 When ready to serve, remove chicken & vegetables to a serving platter.
  • Step #8 Reserve the liquid for gravy.
  • Step #9 Prepare a smooth paste with flour & water.
  • Step #10 pour this into the liquid.
  • Step #11 Turn cooker to high & stir the gravy.
  • Step #12 Add thyme & soy sauce.
  • Step #13 When thick, pour over chicken & vegetables, or serve on the side.
  • Step #14 Yield: 5 to 6 servings, for $4.
